Lemon & Coconut Protein Balls

Fresh, creamy and naturally sweet, these lemon and coconut protein balls make a delicious little snack. Made with cashews, coconut and vanilla protein, they’re satisfying, easy to make and perfect to keep in the fridge for when you need something sweet.

Ingredients

100 g raw cashews, soaked

60 g desiccated coconut

1 scoop vanilla protein powder

Juice of 1 lemon

Zest of 1–1½ lemons

Extra desiccated coconut, for coating

Method

Soak the cashews in water for 4–8 hours in the fridge. Drain and rinse well.

Add the soaked cashews, desiccated coconut, vanilla protein powder, lemon juice and zest to a food processor.

Blend until the mixture comes together and is slightly sticky. Scrape down the sides as needed.

Roll the mixture into small balls using your hands.

Place a little extra desiccated coconut on a plate and roll each ball in the coconut until lightly coated.

Refrigerate for at least 30 minutes to firm up before serving.

Storage

Keep in an airtight container in the fridge for up to 5 days, or freeze and take them out as needed.
